Organic Mongolian sheep casings are distinguished as the finest and most delicate among all natural casings.

The small intestine of a sheep typically measures between 25 and 29 meters in length. During the selection process, we carefully cut the intestines into sections of uniform specifications to ensure consistency and quality.

The diameter of sheep casings can range from 14 to 30 mm, with the most common sizes falling between 18/20 mm and 24/26 mm. Variations in caliber may occur depending on the breed and origin of the sheep. For Mongolian sheep casings, the primary calibers are 18/20 mm and 20/22 mm.

The quality classifications primarily indicate the number and size of pinholes present in the casings. These pinholes result from different stages of manufacturing, specifically during pulling and cleaning processes.

IA quality is completely free of pinholes and is typically used for delicate, liquid meat products such as frankfurters.

AB and BC qualities exhibit increasing quantities and larger diameters of pinholes, making them suitable for sausages with thicker meat fillings.

Please note that these quality classifications do not reflect differences in the visual appearance or microbiological condition of the casings.

The code "3/14/91" provides key details about the product:

• The first number, 3, indicates that each individual piece is at least 3 meters in length.
• The second number, 14, specifies the maximum number of pieces contained in the bundle.
• The third number, 91, represents the total length of the entire bundle in meters.
• This coding system is also applicable to other natural casings, such as hog casings (small intestines).  

In general, products designed with longer minimum lengths and fewer pieces tend to enhance workflow efficiency. Since longer, uniform strands are relatively rare, such products typically carry a higher market value compared to standard specifications.

When properly preserved with salt and stored under appropriate conditions, sheep casings possess an almost indefinite shelf life. For our dry salted products, an expiration date of one year from the date of shipment is applied.

In the case of sheep casings preserved in ready-to-fill salt brine with lower salt concentrations, the product requires a shorter soaking time, which offers convenience to the user. However, these casings are inherently more perishable. Therefore, an expiration date of two months is assigned when stored at temperatures maintained between +2°C and +7°C.
